11:15:39 mamasara The Feeding Your Family Healthy on a Budget 10am PST
11:54:51 mamasara Hello Goodmorning... I'm Sara the host of this chat  :silly:
12:08:37 mamasara Heloo any one here?
12:10:26 kaylasmama Hi!
12:12:05 kaylasmama Is this the budget chat?
12:17:18 mamasara oh yes, Hi
12:17:56 mamasara Glad someone finally showed... I think maybe we are confused as to the time? I always thought it was 10am right after the Homeschool chat
12:18:12 mamasara How are you this morning?
12:19:02 kaylasmama HI...Good, thanks
12:19:17 kaylasmama It's pretty clear to me what time it starts ;)
12:20:37 mamasara yup, I don't know maybe these chats are always this slow??? Don't know anyhow, I have some things to chat about if you'd like to get started
12:21:29 ourwiefamily hello!
12:21:36 mamasara Topic: Food Shopping on a Budget
12:21:49 mamasara Hello Wiefamily! Thanks for dropping by
12:21:49 ourwiefamily cool ... that's what I was looking for.  :)
12:22:03 ourwiefamily my name is Karla in case you haven't seen me in other chats.
12:22:16 mamasara Okay, I'm Sara
12:22:17 ourwiefamily I'm mum to six kids ages 14 down to 11mo, so I am very interested in this topic!
12:22:26 mamasara Excellent
12:22:38 mamasara 1. Make a Food Budget
12:23:10 mamasara I.E. if you shop for your family 1x per week divide your food budget by 4 (400/4 = 100/week )
12:24:05 ourwiefamily I am curious ... how big are your families and how much do you spend on groceries per month?  What is your goal amount?
12:24:12 mamasara 2. Plan meals and snacks for your family each week
12:24:42 mamasara Well, we have a family of 4 and our budget is anywhere between 200 - 400 month depending on the income (income varies)
12:25:00 kaylasmama Hi Karla and Sara...I'm Jill, mommy to DD, Kayla who is 13.5 months
12:25:17 kaylasmama We spend $60 a week...but lately, trying to spend less. SO hard
12:25:21 mamasara Some weeks are pretty scarce... I have 2 boys and a hubby LOL
12:25:46 mamasara Hi Jill! With a wee one it is a bit easier as they can just drink mama's milk
12:26:02 kaylasmama Yah...but she is starting to eat 2-3 meals a day
12:26:02 mamasara Does your family eat out a lot?
12:26:07 kaylasmama No...we NEVER eat out
12:26:11 kaylasmama can't afford it!
12:26:59 mamasara You let her eat from your food stock right? Or do you make her food ?
12:27:49 mamasara 3. Make a shopping list include your coupons that you use (product exp date)
12:27:52 kaylasmama She eats our food sometimes, but mostly I make her something...right now she's only interested in fruit.  *)
12:28:06 kaylasmama AND we only eat organic...tough!!!
12:28:30 mamasara fruit is great! Organic is Super! She is off to a fantastic start.
12:28:36 kaylasmama yeo
12:28:44 kaylasmama oops..meant Yep
12:28:45 kaylasmama ;)
12:28:46 mamasara Do you belong to a local food-coop
12:29:01 kaylasmama so..I was just answering Karla's question about how big our family is and how much we spend
12:29:05 mamasara Hellow Lelia this is the Family Budgeting Topic
12:29:19 kaylasmama Trying to get a membership, but it's not fitting into our budget right now
12:29:19 Lelia Yay! I found the right room!
12:29:37 kaylasmama Hi lelia!
12:29:42 Lelia hi!
12:29:47 ourwiefamily where are you located, Kayla?
12:29:48 mamasara Try to maybe split a membership with another family... We did this in the beginning with my folks
12:30:23 kaylasmama Hi Karla..my name is Jill :) We're in Santa Barbara....
12:30:40 ourwiefamily lol ... sorry ... just noticed it's Kayla's mom.  oops
12:30:46 Lelia how does one find a food coop?
12:30:52 kaylasmama ya ;) no worries!
12:30:52 mamasara Santa Barbara... they have a nice farmers market... are you close to that?
12:31:04 ourwiefamily azure standard is worth looking into depending on your location ... not sure how far south they go.
12:31:16 mamasara google CSA I believe Let me check if that works
12:31:17 kaylasmama oh yaaaa..and we have 3 farms to shop from too....lots of options...but they all cost the same..
12:31:40 kaylasmama we spend most of our money on produce ;)
12:32:08 kaylasmama Hi Penny and Ruth!
12:32:13 mamasara Yes, that is the case here too but it is our main staple except for rice
12:32:20 mamasara Hello Ladies
12:32:28 kaylasmama yah....us too
12:32:41 ourwiefamily penny and ruth are in a different room from us
12:32:45 mamasara Do you ladies eat meat, chicken, turkey, fish? If so how do you save on these?
12:32:53 ourwiefamily yes... we are meat eaters
12:33:02 kaylasmama wow Karla..just saw how many kids you have
12:33:08 Lelia we eat chicken sometimes
12:33:18 kaylasmama Good on ya
12:33:22 kaylasmama (Karla)
12:33:24 ourwiefamily best way to save on beef is to buy part of a cow direct from a farmer ... best way to save on chicken is to buy from Amish (those tend to be organic or close to it even if not certified)
12:33:25 mamasara Large family... Karla... how much to you spend a month on your family ?
12:33:28 Lelia I'd like to buy some fish - husband doesn't like it
12:34:02 Lelia where do you find amish? I know they are in PA>
12:34:06 ourwiefamily or Mennonite ... I think there are Mennonites around here that sell.  Big chickens for like $5 each so cheaper than local grocery and tastes WAY better
12:34:59 ourwiefamily we found out through the grapevine.  Typically, if you ask around at places like LLL or a local natural foods store or homeschoolers, someone knows how to find them
12:35:01 mamasara fresh chicken is So much better you'll never go back to store bought... I lived in MO for a while and they were both Amish/Mennonite we shopped at their store all fresh/organic (not certified)
12:35:12 ourwiefamily Another way to save  is to buy milk straight from the dairy
12:35:33 mamasara Where do you live? (farm country?)
12:35:55 ourwiefamily we are in ND ... but I know lots of people that work this out in larger cities.
12:35:57 mamasara I never thought about any of those but I guess that makes sense... We do the veggie/fruit from the farms
12:36:04 Lelia I am in jersey city nj
12:36:23 Lelia I'm in an urban area
12:37:14 kaylasmama Wow...never thought of fresh chicken. DUH! Good idea..I'll have to check around here...
12:37:22 ourwiefamily if you look in the phone book for dairies on the outskirts of town, there might be some ... and if they are there, they may have it set up so they deliver into the city if there is a group interested
12:37:30 ourwiefamily same thing with buying the other meats
12:37:36 kaylasmama huh...cool. Thanks Karla
12:37:54 ourwiefamily Like the mennonite chickens come from several hours away, but one person goes out there, picks them up, then they can be picked up at that person's home
12:38:41 ourwiefamily well ... sadly, we aren't doing any of this right now.
12:38:49 ourwiefamily but we used to and it was awesome
12:39:13 mamasara urban areas still might be able to find fresh produce and meats depending on the natural food stores around...
12:39:33 mamasara http://www.nal.usda.gov/afsic/csa/ is the directory for Community Supported Agriculture You can look for a farm near you
12:39:39 Lelia that gets expensive
12:39:47 Lelia ok, thanks
12:39:52 ourwiefamily and the underground" natural people who have relatives on farms far away or who have really done their detective work on your local area.  So it's finding the right people!"
12:40:08 mamasara Yes, Lelia, how big is your family and how much is the food budget?
12:40:11 Lelia I actually joined one this year but the harvest hasn't been good this year.
12:40:27 ourwiefamily undergrounders" tend to be very generous and just want to share the good life, so they don't tend to be as expensive as the more obvious routes"
12:41:03 Lelia 3 of us. we actually don't have an official budget
12:41:12 ourwiefamily I'm trying to figure our food budget for the month ... it's a little complicated.  We have a family of 8.  We receive two WIC checks per month (two eligible children) so that is about $110 at least
12:41:19 ourwiefamily Then we get $400 in food stamps
12:41:29 mamasara I wanted to get some ideas on how to reduce our grocery bills right now. Some ideas I came up with are:
12:41:35 ourwiefamily Then we usually pay at least another $100 over that
12:41:37 kaylasmama I wish I could get my hubby to do food stamps
12:41:45 mamasara 1. Eliminate Junk Food
12:42:01 mamasara 2. Drink water or skim milk
12:42:13 mamasara 3. Limit Juice intake to 1/2 c serving / day
12:42:25 mamasara 4. Buy Whole Fruit instead of sweets
12:42:53 mamasara 5. Buy Bulk and freeze (like buy a package of potatoes, cook what you need and freeze the rest)
12:43:18 mamasara 6. Pick your own farmers -- this is good excercise and family time plus saves money
12:43:56 mamasara 7. Switch from packaged cereals to Oatmeal Saves almost $4.00 just add some fresh fruit of 100% fruit jam for sweetner
12:44:22 mamasara 8. Eat fresh veggies or grow your own (containers local community garden etc)
12:44:59 mamasara 9. Save on meat by paying attention to serving size (an active adult only needs about 7 ounces spread out over 3 meals)
12:45:13 mamasara 10. Don't cook more than you need
12:45:30 mamasara 11. Use peanut butter or another nut butter instead of luncheon meats
12:45:54 mamasara 12. use rice vinegar instead of dressings and splash dressing don't drench
12:46:08 mamasara Any Ideas?
12:46:10 ourwiefamily we had to do food stamps because 2.5 years ago, my baby was in the NICU after his birth and we simply couldn't afford our co-pay (we had ins) so we got medical assistance and then we figured it was easy enough to add in food stamps.  So it worked out.
12:46:41 ourwiefamily I have found some of those helpful, but not others.
12:47:00 ourwiefamily I can give you my thoughts, if you'd like ... :)
12:47:02 kaylasmama Don't eat out
12:47:03 mamasara You seem to be the expert, just from experience...
12:47:15 mamasara Sure Loved to hear from you
12:47:27 kaylasmama Only buy what you NEED
12:47:43 ourwiefamily 1.  Eliminate  junk food doesn't work for us.  When we eliminate it, we end up craving it and then we screw up and over spend to compensate
12:47:58 kaylasmama hehehehe...we did that too
12:48:07 ourwiefamily So what I started doing instead is buying healthier snacks and scheduling them w/ lunch.
12:48:44 mamasara We go out for junk food (like Icecream, we just buy the icecream cone now and again) it makes it special for us and we don't include it everyday or even every week
12:48:52 ourwiefamily So every week, I buy 2 bags of tortilla  chips, one bag of pretzels, 1 bag of corn  chips (generic fritos), 1 or 2 bags of natural cheese puffs (like cheetos but no food dyes).
12:49:23 ourwiefamily oh and I'm thoroughy addicted to Natural Cheddar Doritos (again no food dyes)  but those are a Mama treat, no kids!
12:49:38 mamasara You don't find it easier to make your own? Bake the tortillas or corn ?
12:49:47 ourwiefamily NOPE
12:49:52 ourwiefamily (did you hear me yelling??? LOL)
12:49:55 mamasara Time? Expense?
12:50:08 kaylasmama We have the SAME snacks here Karla
12:50:09 kaylasmama hehehe
12:50:42 ourwiefamily Mostly time I think ... We homeschool and I need something in my life to be simple!
12:51:16 mamasara okay that makes sense... why not get the kiddos involved in the cooking? Are they able to help out in this area?
12:51:33 ourwiefamily We keep ice cream on hand at home too and we have it like once per week (if we think of it) ... that's cheaper and it's fun
12:51:37 mamasara What do you all do for the Sweet Cravings?
12:51:55 mamasara ? answered LOL
12:52:25 ourwiefamily we get candy at parades and such, then go through and toss the gross stuff (we can't have artificial food dyes), then the kids can have like one tootsie roll when they are craving
12:52:27 mamasara We can't keep ice cream here because it would be gone quicker than you can say we've got I.C.""
12:52:57 mamasara Candy is readily available everywhere sad to say
12:53:15 ourwiefamily I can't have chocolate so my sweet of choice is that I keep some of those white candy chips (for making candy) and melt a little then dip a big ol spoon of peanut butter in it ... YUM
12:53:45 mamasara Tip: StonyField Farms - If you sign up for the newsletter, you can have access to $30 worth of coupons http://stonyfield.com
12:53:58 Lelia cool!
12:54:07 ourwiefamily plus I like to have tea and toast with yummy jelly on it (I actually canned raspberry jam from my raspberries this year and I am so not a homemaker type!)
12:54:42 mamasara Cool.... Way to go WieFamily!
12:55:00 ourwiefamily (bowing) thank you!
12:55:10 mamasara LOL
12:55:19 ourwiefamily lol I've never done anything like that in my life and not sure I will again, but one of my best friends helped me do it (the truth is out!)
12:55:27 mamasara I have a generic recipe for a casserole would you ladies like to have it?
12:55:35 ourwiefamily YES please
12:56:42 ourwiefamily oooh my other guilty pleasure is we buy that white cinnamon bread sometimes.  No nutritional value but yummy!
12:56:50 mamasara Basic Mix - 2 cups nonfat dry milk, 3/4 c cornstarch, 1/2 ts pepper, 1/4 cup instant chicken bouillon, 2 tBS minced onion, Garlic clove, fresh parsely
12:57:26 mamasara 1. Combine all ingredients and store in an air tight container. (Oh this is if you use the dry ingredients not fresh)
12:58:00 mamasara 2. use as a substitute for one can condensed soup mix 1 /3 cup dry milk and 1 1/4 cups water in a saucepan
12:58:14 mamasara 3. Cook and stir until thickened.
12:58:58 mamasara Calorie comparison (mushroom soup - 330 23.8 fat 2370 sodium) mix+ = 95 cal. 0.2 fat 710 sodium
12:59:16 mamasara Now just take what you have on hand from the following categories:
12:59:28 mamasara Grains/Potatoes - Uncooked
12:59:43 mamasara Vegetables - Cooked, Raw, Canned, frozen
12:59:55 mamasara Meat/Poultry Fish or Beans Cooked
13:00:05 mamasara Sauce(mix)
13:00:11 mamasara Cheese(optional)
13:00:16 mamasara Topping(optional)
13:00:52 mamasara Examples: 1 cup of macaroni, spaghetti, rice noodles, diced, cubed, shredded potatoes
13:01:07 Lelia where do you find bouillon that isn't full of processed chenicals?
13:01:17 mamasara 2 cups: veggies , carrots, peas corn green beans broccoli spinach etc...
13:01:41 ourwiefamily I used to ahve a great bullion but I lost the source of it  :(  I've been in mourning. It was healthy and yummy ... nothing bad in it.  Sigh
13:01:58 kaylasmama Gotta run mommies! have a great week and thanks for the info....see ya'll next week
13:02:07 mamasara You can find a less sodium version at your local health food store, but then if you make this fresh you can add chicken broth
13:02:34 Lelia ok, thanks
13:02:47 mamasara Saucce- 2/3 cup and  2 1/2 cups water/milk
13:03:07 mamasara cheese shredded and then top with bread crumbs etc...
13:03:25 mamasara This is good for those leftovers and days where you don't want to think...
13:03:33 ourwiefamily my other comment on how we save money is that we buy bread at the used" bread store ... the day old bread store, in other words.  We get really good quality, 100% whole wheat good stuff bread for as much as $1.20 per loaf or as little as $.60 per loaf."
13:03:53 mamasara great source...
13:04:00 ourwiefamily W/ the recipe, what temp do you cook at and how long?  And can you email a copy of it to interested people?  I don't know how to copy paste from the chat
13:04:44 ourwiefamily but man that sounds like a good dinner for tonight because I have totally blown it this week and not made a menu (really  mad at myself)
13:04:49 mamasara Mix the ingredients (first 5) cover cook at 350 for one hour until temp. is 165 degrees
13:05:06 mamasara You can also cook stove top by
13:05:12 ourwiefamily how do I know temp is 165 degrees?
13:05:30 mamasara stir all ingredients including sauce in a large skillet bring to a boil
13:05:35 ourwiefamily lol ... Im a little helpless in the kitchen.  I try not to be though and one day I will conquer!  LOL"
13:05:57 mamasara reduce heat simmer for 30 min. (stir to prevent sticking)
13:06:14 mamasara make sure temp. is 165 (cooked for doneness)
13:06:32 mamasara LOl you sound awesome mama don't knock yourself
13:07:04 mamasara One more thing I wanted to share with you ladies is this awesome GE Free Food list free to download from Greenpeace
13:07:28 mamasara http://www.greenpeace.org.nz/truefood/default.asp
13:07:45 Lelia thanks!
13:07:46 mamasara Excellent guide and you can customize to your shopping habits
13:07:59 ourwiefamily so do I need to use a thermometer to check the food kinda like you check a turkey?
13:08:20 mamasara Yes,
13:08:43 mamasara unless you know from experience, its just safer to use a temp.
13:09:01 ourwiefamily so can you email me these instructions?  Pretty please?  :)
13:09:17 mamasara If you have kiddos who like the fish fingers this is a super recipe:
13:09:27 Lelia cool!
13:09:36 mamasara Cod, 1/4 c organic flour, sea salt, olive oil and lemon -
13:09:52 mamasara just mix the fish in the food processor until it turns into a paste
13:09:58 mamasara add flour and salt
13:10:13 mamasara heat oil in a skillet
13:10:26 ourwiefamily how much Cod?
13:10:28 mamasara for nuggets drop by spoonfuls for fingers mould into fingers
13:10:36 mamasara cook and then turn over
13:10:47 mamasara Quirt some lemon on them and enjoy.
13:10:53 mamasara Cod about 500grams
13:11:04 ourwiefamily do you mix in flour or dip it in the flour?
13:11:13 ourwiefamily ummm ... I'm not a metric gal, LOL
13:11:25 ourwiefamily 500 grams translates to how much?
13:11:27 mamasara mix into the fish after it turns to paste in the food processor
13:11:42 mamasara 1 - 2 pieces
13:11:47 ourwiefamily sounds yummy to me!
13:11:56 mamasara I would think maybe 1 pound
13:12:33 mamasara You can spice it up a bit too for the adults by adding some curry paste
13:12:36 ourwiefamily can you use any fish?  Sometimes my guys go fishing and well, I'm never sure what to do w/ it.  I think fish is ICKY.  *I'm* the one who likes fish fingers, LOL
13:13:11 mamasara LOL sure I would think so, Cod is just a very big staple
13:13:45 mamasara For those who can't eat wheat just use 2 eggs instead of the flour
13:14:22 Lelia is wheat flour ok?
13:14:48 mamasara Yes, but people on a gluten free diet usually are allergic
13:15:34 ourwiefamily interesting
13:15:40 Lelia I mean as opposed to white flour
13:15:59 ourwiefamily yes, wheat flour should prob be fine though you may want to experiiment by using whole wheat pastry flour
13:16:06 ourwiefamily if the reg ww is too heavy, I mean
13:16:18 ourwiefamily We used to use ww pastry flour in so many things.
13:16:41 ourwiefamily have you used it?
13:16:44 mamasara YOu can sneak in squash if you buy Spaghetti Squash... Just take 1/2 squash Tahini to taste sea salt, lemon juice and garlic Mix in the food processor add tahini 1/4 lemon juice and salt (great topping) or substitue any squash, chick peas, etc....
13:17:21 ourwiefamily you mean sneak squash into the fish sticks?
13:17:25 ourwiefamily (sorry confused)
13:17:28 Lelia no, I haven't
13:17:35 mamasara We use organic flour that is wheat free (no reason) just do it works fine
13:17:52 ourwiefamily ww pastry flour is ww but it is lighter and better for quick breads, cookies, that kind of thing.
13:18:06 mamasara LOL no as a veggie or as a topping on a pasta dish
13:18:17 ourwiefamily it's the difference between using hard winter wheat and spring wheat somehow.  Different gluten content, if I'm remembering right.
13:18:19 Lelia ah, thanks. I like the idea of sneaking in veggies
13:18:23 ourwiefamily thanks ... was confused.
13:18:49 ourwiefamily I need to do more  sneaking in of veggies.  I've suddenly ended up w/ picky kids again.   *)
13:19:03 ourwiefamily I thought I got past that after the first two!  Silly me!
13:19:26 mamasara There is a recipe we tried out last week: Healthy slaw and I liked it and the neighbor kid liked it...
13:19:32 Lelia I gotta run. good info. thanks!
13:19:34 ourwiefamily mamasara ... sorry to keep bothering you about this, but any way you can email that casserole recipe to me?  It is now gone
13:19:44 Lelia oh, gotta see that
13:19:54 ourwiefamily the chat doesn't see" too far back in history"
13:20:06 ourwiefamily I can wait until it is archived, but I want it for supper tonight!  :)
13:20:20 mamasara purple cabbage, carrots, yellow squash, bit of sugar, rice vinegar, colorful peppers
13:20:27 Lelia oh, aren't they archived?
13:20:33 mamasara Mix it all up and serve, no mayo so low in fat!
13:20:35 ourwiefamily yes, but not for a couple days, usually
13:20:44 Lelia ok
13:20:57 ourwiefamily sounds like something I would lvoe and m y kids would running shrieking from the room.  hee hee
13:21:02 mamasara Yes, send me an email with (casserole recipe ) subject line lavendarmommie@yahoo.com
13:21:23 mamasara I loved it, kids wouldn't touch it!
13:21:30 Lelia now, I really need to run. thanks again!
13:21:43 mamasara Bye ladies thanks for coming. Talk to you next week.
13:21:53 ourwiefamily already sent
13:21:58 ourwiefamily thanks a ton
13:22:00 ourwiefamily :)
13:22:10 ourwiefamily I won't be here next week but will try to make it after that
